Tomato Sauce



I used a bunch of bruised tomatoes provided by my roommate to procure and preserve 3 jars of tomato sauce and 1 jar of tomato juice (jar on the far left). I kept the sauce pretty simple, only adding fresh herbs. I used basil, marjoram, and thyme. It's funny how often I've eaten tomato sauce in my life and this is the first time I've ever made it. These jars feel very special because I know where the tomatoes and herbs came from and the process and care that was used to preserve them. With a little bit of time and experienced instruction, I feel empowered and independent from the disconnect of the industrialized process. This empowerment may not be measurable in Gross Domestic Product, but it is immeasurable in self assurance/reliance.
